Olive Variety: Local Koroneiki

Harvest period: Early November, the first oil of the season

Olive oil category: Premium extra virgin, low acidity between 0.2-0.3.

Organoleptic profile: Bold and assertive. Intensely fruity and aromatic. Distinctly pungent and spicy, pleasant peppery aftertaste.

Uses and food pairing: Use raw for dipping, or on dishes that call for bold flavour enhancement: toasted bread, sautéed vegetables, pulses, marinades, grilled or roast meat.
